Acclaimed worldwide by serious cooks and renowned chefs.
Amazon.com Review It may seem like a contradiction, but sharp knives are the safest. With a clean edge, a knife is more predicable and easier to control. If you've purchased a top-of-the-line knife, maintaining the quality of the blade ensures maximum value from your investment. This Chef's Choice knife sharpener performs professional-quality sharpening on any knife, from gourmet knives to hunting knives--even the tips of serrated knives can be improved with this machine (for a complete sharpening of serrated knives, however, Chef's Choice recommends models 120 and 320). For top-quality edges, there are two sharpening and honing stages, which use 100% diamond abrasives, and a final polishing stage. Each stage uses precision angle guides to create a unique "Trizor-Plus" edge for maximum sharpness and durability, while a magnetic pad collects residue so the machine is easy to clean and maintain. While a sharp knife is indeed a safe knife, it's wise to use caution with your newly sharpened knives, as they'll be sharper than you expect. --Laura Cuthbert

Better Than Nothing December 24, 2008 Used this for the first time today on a 29-year-old 6" Sabatier stainless steel kitchen knife. It is definitely awkward to use and there is a learning curve even after reading the instructions carefully. I found a way to use it which is not documented in the instructions: before lowering the blade into contact with the grinding wheels, lay the blade against the magnet and lower it in with a "slicing" motion. This ensures that the blade is at the proper angle when it finally comes into contact with the wheels. The magnets are not very strong to begin with and it is easy to hold the knife in such a way that the blade does not come in contact with the magnet. Another problem is that if you don't hold the knife just so, the motor will stall. It will just stop turning until you reposition the knife.
The unit did put some scratches on my knife and the keen is just adequate for light-duty kitchen use. Any claims about razor sharpness are bogus, at least with my knife, but it does cut newsprint satisfactorily. From reading other reviews it sounds like this unit excels at rehabilitating abused or damaged knives, which was not the case with my knife. They say a sharp knife is safer than a dull one, but I've got to think a there is a sharpener with a better-thought-out design, especially with regard to guiding the blade, so I'm going to look around (these electric models are not cheap).
Chef's Choice Sharpener November 26, 2008 Recommended by a friend. They were right, it's a good shsrpener. You need to practice a little to get the hang of it. It's good to have sharp knives.

I sharpened three Henckels knives and did not obtain the razor sharp results that were promised. Have not sharpened the rest yet. Would not purchase again.
Excellent September 7, 2008 This was a gift for my husband who had done pretty extensive research before we ordered it. He LOVES it. The only thing keeping me from giving it 5 stars, is that it is so good we have heard (but not yet experienced) that it can eventually wear doen your knives so must be used somewhat sparingly.
No kitchen should be without one February 22, 2008 The smaller unit would have been OK, by my girlfriend had a bunch of abused kitchen knives, so the extra slot is great for starting over. I cannot imagine using anything else to sharpen kitchen knives with. I get a great edge every time, in seconds. Keeping it sharp is just a couple of strokes per knife every few weeks. Incidentally, even after an explicit warning, my girlfriend practically sliced the end of her finger off - if you're not used to knives that seem to melt through fruit and veggies, don't even consider this - it's dangerous!
